Rubatà are typical breadsticks of the Piemontese cuisine. Their name derives from the dialect and means “fallen” due to the technique used, which is giving them this typical rolled shape.
After having stretched them, the baker takes them from the ends and turns them over, making a complete turn with the thumbs and letting them fall or rather “rubatè” with gentle firmness on the stretching table.
